We all know it is a great replacement of butter, it also actually contains nearly 20 vitamins and minerals, I haven’t always liked avocado, as a child I would gag at the taste, but my palette changed and finally I realised what’s really good.
One of my cravings during pregnancy – with anything and everything, recently also found avo contains FOLATE which may reduce the risk of foetal neural tube defects.

A quick EASY Recipe – (Vegetarian for me, I am kinda off meat at current)
__ Spicy Angel Hair Pasta __
What you need –
- Angel hair pasta
- Sun dried tomato
- Pine nuts
- Olive oil
- OPTIONAL – Prawns or chicken
Cook the pasta as usual, strain and place it on your plate or bowl, a table spoon of pesto (CAUTION – very strong take it easy) a small amount of Olive oil to keep it moist,
Cut your Sun dried tomatoes, Avo and roast your nuts a little before you through them in.
Add as much chilli as you can handle
And if you want poultry (meat) cook that beforehand and chuck it all in at the end..
Mix it up and WOOOOWZZZERS… You’re Done! So delicious !
